Ingredients of Chicken Ghee Roast Recipe

Step 1
-1 kg chicken
-Juice of 1 lemon
-Half bowl of yogurt
-½ tsp of turmeric powder

Step 2
-10-15 dry red chillies
-2 tsp black peppercorns
-2 tsp coriander seeds
-11/2 tsp cumin seeds
-1 tsp fenugreek seeds
-7- 8 garlic cloves
-Tamarind water

Step 3
-1/2 cup of ghee
-Salt
-11/2 tsp jaggery
-Curry leaves

Method of Chicken Ghee Roast Recipe

I’ve got 1kg chicken; to this, I am going to add this one cup lemon juice and half a bowl of yogurt. Give it a good mix with your hands. Now I am going to add half a teaspoon of turmeric powder. Leave this for one hour. Chicken Ghee Roast Recipe

Step two, just take a thick bottom to pan, to this I’m going to add about 10 to 15 dry red chillies, 2 teaspoons of black pepper, about 2 teaspoons again of coriander seeds, 1 and ½ teaspoon of cumin seeds, another teaspoon of fenugreek seeds, give it a good mix you just want a dry roasted, but you don’t want to burn it.

So just make sure that it’s not burning. It’s like lovely golden brown I’m going to switch it off right now and let it rest for 5 minutes. Now my spices are cooled. I’m going to put in a mixing bowl. Chicken Ghee Roast Recipe

Grinding it properly

To this, I am going to add 7 to 8 cloves of garlic. While you’re mixing it might get difficult to get that consistency. So for the same thing mixer, you keep bringing all your masala’s together in sort of a little mount and keep grinding it.  Chicken Ghee Roast Recipe
Now going to the next step, take a thick bottom pan. I’m going to take about ¼ cup of ghee in a pan. To this, I’m going to add our marinated chicken piece by piece.

Just make sure your chicken is not more than like 70% cooked. Because we are going to put it back in the pan. Which is removing the pieces that I think are complex done now, the rest of the yogurt mix that’s remaining I’m going to add it to the pan and give it a good mix. Now in the same pan add the ground masala. You just want to cook the masala so that the raw smell of it goes away. I’m going to add this some more ghee, about two tablespoons of it. To this, I’m going to add some jaggery a teaspoon and a half. Give it a good mix. Now I’m going to add the cooked chicken piece by piece. Spit it on a low flame and leave it for the next five minutes. Now chicken is ready to serve. Chicken Ghee Roast Recipe
